【动物形态】
鲈鱼 体长,侧扁,背腹面皆钝圆,背部在第1背鳍起点处隆起。体长约40厘米左右,头略尖,中等大。吻尖,口大,稍倾斜,下颌长于上颌。上下颌、锄骨、口盖骨上都有细齿,舌平滑无齿。前鳃盖骨后缘有锯齿,后角下缘有3个大棘,鳃盖后缘具1棘。鳃孔大,两边的鳃膜和鳃峡相连处的距离很近,鳞小,呈栉形;侧线鳞70~78,背鳍、臀鳍基部鳞片小。背鳍显著分为2个,第1背鳍Ⅻ,为梗棘,以第5及第6棘最长;第2背鳍13,为分枝鳍条;背鳍起点在鳃盖棘后。腹鳍16,胸位。胸鳍短。臀鳍Ⅲ7~8,起点在背鳍第6鳍条下方,其棘以第2个最为强大。体色背部灰白,两侧及腹部银白,体侧上半部及背鳍上有黑色斑点,背鳍和尾鳍呈灰色,有黑色边缘,背鳍中部有黑色条纹。 性凶猛,以鲚、银鱼、鲻鱼等为主要食物。分布沿海一带及河口和江河中。
【化学成分】
食部100克含水分78克,蛋白质17.5克,脂肪3.1克,碳水化物0.4克,灰分1克;钙56毫克,磷131毫克,铁1.2毫克,核黄素0.23毫克,尼克酸1.7毫克。台湾产者含水分76.10%,粗蛋白19.39%,粗脂肪1.16%,灰分1.16%。关于维生素,尚有下述数字:100克中有维生素A180国际单位,B1_130,B2_110微克,尼克酸2.4毫克。 鲈血中含铜量与鲈的性成熟度无大关系,有色肌中较无色肌中为多。

【功用主治】
益脾胃,补肝肾。治水气,风痹,并能安胎。 ①崔禹锡《食经》:"主风痹瘀疰,面疱。补中,安五脏。可为臛脍。" ②《食疗本草》:"安胎,补中。作鲙尤佳。" ③《嘉祐本草》:"补五脏,益筋骨,和肠胃,治水气。" ④《本草衍义》:"益肝肾。"
【名家论述】
《本草经疏》:"鲈鱼,味甘淡气平与脾胃相宜。肾主骨,肝主筋,滋味属阴,总归于脏,益二脏之阴气,故能益筋骨。脾胃有病,则五脏无所滋养,而积渐流于虚弱,脾弱则水气泛滥,益脾胃则诸证自除矣。"
