〔 制 法 〕
１ ． 将 大 麦 米 和 豇 豆 洗 净 ， 一 起 放 入 锅 中 ， 加 入 凉 水 及 碱
面 ， 用 旺 火 烧 沸 后 ， 撇 去 浮 沫 ， 改 用 微 火 熬 １ 小 时 左 右 ；
２ ． 熬 时 要 不 断 用 勺 搅 拌 ， 以 防 粘 锅 ， 待 熬 到 大 麦 米 开 花 、
豇 豆 熟 烂 、 粥 粘 稠 时 ， 舀 入 铝 桶 中 ， 置 微 火 上 保 温 ；
３ ． 食 用 时 ， 碗 内 放 上 红 糖 ， 盛 满 大 麦 米 粥 ， 搅 拌 均 匀 即
成 。
