虾仁去肠泥、洗净,用毛巾吸干多余水分,用盐 1/2小匙、太白粉拌腌 10分钟。
蛋打成蛋汁加盐 1/2小匙搅匀。
起油锅,入油 2大匙,用大火将虾仁炒至变色,淋下蛋汁,快速搅拌至蛋汁凝固即可。
备注:
用搅散的方法,蛋的质感较嫩、颜色亦美,不要做成蛋饼或等到焦黄才起锅。
