【原料】
鲜贝500克，面粉5克，白鸡油100克，生姜水10克，料酒15克，盐5克，味精3克，湿淀粉10克，蛋清6个，火腿50克，生菜25克
【制作过程】
1、鲜贝洗净，控水，剁成泥茸，加生姜水，调成稠糊状，搅上劲，加入盐、味精、料酒、3只蛋清调匀，再加入白鸡油及淀粉搅拌均匀，待用。 2、将调制好的鲜贝泥放入大盘内摊平，盘四周用一张油纸抹上少许油，上蒸锅，蒸10分钟左右，取出 3、制出高丽糊：三个鸡蛋清打入盘内，用筷子抽打起泡，加干面粉调匀 4、再将蒸好的鲜贝换盘，抹蛋泡糊用火腿、生菜叶，组织成图案由蒸锅蒸1分钟后，取出。 5、炒勺内倒入鸡汤，加入生姜水、盐、烧开，放湿淀粉，勾芡，浇在一品鲜贝上，即可。
