【原料】

鲜贝500克,面粉5克,白鸡油100克,生姜水10克,料酒15克,盐5克,味精3克,湿淀粉10克,蛋清6个,火腿50克,生菜25克

【制作过程】

1、鲜贝洗净,控水,剁成泥茸,加生姜水,调成稠糊状,搅上劲,加入盐、味精、料酒、3只蛋清调匀,再加入白鸡油及淀粉搅拌均匀,待用。 2、将调制好的鲜贝泥放入大盘内摊平,盘四周用一张油纸抹上少许油,上蒸锅,蒸10分钟左右,取出 3、制出高丽糊:三个鸡蛋清打入盘内,用筷子抽打起泡,加干面粉调匀 4、再将蒸好的鲜贝换盘,抹蛋泡糊用火腿、生菜叶,组织成图案由蒸锅蒸1分钟后,取出。 5、炒勺内倒入鸡汤,加入生姜水、盐、烧开,放湿淀粉,勾芡,浇在一品鲜贝上,即可。
