The method of applied swelling index of glutenin(SIG) was adopted to investigate the influence on swelling curves of different purities of SDS,extracting solvent and different concentrations of SDS,lactic acid and acetic acid in SDS solution,SDS-Lactic acid solution and SDS-Acetic acid solution.
选用高、中、低筋3种典型小麦粉样品,采用应用型麦谷蛋白溶涨指数法研究了提取溶剂SDS的不同纯度及SDS溶液、SDS乳酸溶液、SDS乙酸溶液中SDS、乳酸、乙酸的不同浓度对麦谷蛋白溶涨曲线的影响。
