1、准备蛋壳。将鸡蛋用铁钉戳几个洞,让蛋清和蛋黄全部流出、洗净,晒干保存备用。也可以用鸭蛋或鹅蛋壳。
2、温室或露地栽培的香椿在萌芽前,将蛋壳用草泥糊好。草要适量,做到能糊住,但不干裂。糊泥时用塑料绳塞住小孔,不要弄碎蛋壳,糊好后抽出塑料绳,晒干待用。香椿芽刚萌发时,将蛋壳套上,并固定好,不要弄伤芽子。也可在蛋壳外糊上2~3层草纸,主要是防止芽子把蛋壳撑破。
3、采收。一般是以自然生长的芽子采收期作为香椿蛋的采收适期。
