工艺流程为:选料→冲洗→晾干→盐水浸泡→晒干→粉碎→过筛→加辅料→装袋

具体做法是:

1.选料 用第3茬芽、老叶,1~2年生枝条的皮及平茬1年生苗干的皮,要求鲜嫩,无老皮,不带病斑、虫瘿。

2.冲洗、晾干 将枝皮及香椿芽洗净后在通风凉爽的地方摊晾,至表面无水分,芽叶尚未萎蔫,枝皮干燥但仍发软时为止。

3.盐水浸泡、晒干 将晒干的原料浸入浓盐水(每100kg水加盐20kg)中浸泡2~3h,取出在日光下摊晒至干硬。

4.粉碎 用粉碎机将干香椿芽及老叶、枝条粉碎2~3遍,成粉末状。

5.过筛 粉粒直径为0.01~0.02mm,如胡椒粉。

6.加辅料 在粉碎时将洗净、晾干的辣椒干加入原料中,共同粉碎,过筛。

7.装袋封藏 装入塑料袋中,封口贮存。
