补充资料:西洋菜蜜枣鲫鱼汤

佐餐靓汤宜西洋菜蜜枣鲫鱼汤。西洋菜是应时的蔬菜,其性凉味甘,具清肺热、润肺燥之功。而蜜枣则能润肺生津、健脾和胃。鲫鱼肉质细嫩,鲜美而不肥腻,现代营养学认为其营养全面、含糖分多、脂肪少,在冬日最为肥美,所以有秋鲤冬鲫 之说。中医认为它有健脾利湿、和中开胃、温中下气之功。合而为汤则具润燥下气、养肺健脾之功。

材料:西洋菜600克、蜜枣3个、鲫鱼500克、猪踭肉200克、生姜3片。

烹制:西洋菜洗净;蜜枣洗净,去核;鲫鱼宰洗净,慢火煎至微黄;猪踭肉洗净。一起与生姜放进瓦煲内,加入清水2500毫升(约10碗水量),武火煲沸后,改文火煲2小时,调入适量食盐便可。
