菠菜原汁的主要加工要点为:将菠菜清洗干净,蒸汽热烫3-5分钟,用螺旋榨汁机榨汁。榨汁残渣渗入适量水分,用孔板式破碎机破碎,再用钢玉磨盘机磨细。然后与榨得的菠菜原汁混合,加0.5%-1.0%的食盐,灌注后高温杀菌,杀菌温度为121℃。由于杀菌时产生的絮凝物较多,一般在菠菜叶中添加水果原汁或其它添加剂,把ph值调整到4-4.2,可溶性固形物含量调整到8%,再进行常规热灌注工艺和巴氏杀菌工艺。
