亦称β-d-呋喃果糖苷酶或β-h-果糖苷酶。为水解蔗糖的d-果糖β糖苷的果糖苷键的酶。ec3.2.1.26.与作为蔗糖水解酶而命名的转化酶以及蔗糖酶等系属同一物质。脉孢菌属(neurospora)等微生物的蔗糖分解酶,可水解寡糖和糖苷的果糖苷键,也催化β-呋喃果糖残基从蔗糖向其它糖、醇以及苯酚等转移反应。在动物肠粘膜细胞中有水解各种二糖的一些酶,这里由作用于麦芽糖的酶来分解蔗糖,它与在微生物的果糖苷酶不同。
