福建的一道特色小吃，“鼎边”又叫锅边糊，价廉味美，是福州人日常喜爱的小吃。福州市上到处可见“鼎边”店。以前比较闻名的南台有“三成炳”，城区有“信义”。它的特点是鼎边卷而薄，汤清不糊，味好可口。在50年代初，南台隆平路平理桥的道头亭上，由张依俊兄弟开设一家“唯我十锦鼎边店”，制作的鼎边除具有一般特点外，另加上鸡鸭肝、胗、虾干、目鱼干、香菇、黄花菜等多种配料，味更丰美，曾一度享誉全市。
