目前,我国每年有2000万吨碎米,其经济价值为整米的2/3左右,碎米中含有75%左右的淀粉,为提高碎米的经济价值,本文主要对碎米淀粉及其磷酸酯的制备和理化性质进行了研究,主要研究结果如下:1碎米淀粉的理化性质研究采用碱法提取三种碎米的淀粉,采用扫描电镜、快速黏度分析仪、质构仪、流变仪对其理化性质进行研究,结果如下:(1)碎米淀粉颗粒为不规则多面体,表面光滑,淀粉颗粒间排列不紧密,颗粒大小明显比其他淀粉要小。
