补充资料:鱼肉火腿冬笋芝麻饼
材料: 鲜鱼肉净150克,熟火腿15克,熟冬笋25克,鸡蛋1个,清油1000克(耗75克),熟芝麻75克,姜末1克,酱油15克,精盐10克,味精2克,料酒5克,胡椒面1克,干豆粉适量。
制作方法:
1、将鱼肉切成细粒,装碗内,火腿、冬笋也分别切成细粒,放入鱼肉碗内,加酱油、料酒、盐、味精、胡椒面、姜末码味。
2、蛋清加干豆粉调成糊,将鱼肉、火腿、笋粒拌匀,做成12个圆球,压扁成饼,两面粘上芝麻。
3、锅内油烧至五成热,将饼逐个放入,稍炸定形后捞起,待油温升至七成热时,再下饼炸至呈金黄色,皮酥捞起,装盘即成。
备注: 按此做法,主料也可改用鸡肉,叫鸡肉芝麻饼。
特点: 色泽金黄,外酥里嫩、咸鲜味美,是人们极喜爱的川味著名小吃
