In order to investigate the nutritional ingredients of the long-boiled soups which the Cantonese eat in ordinary meals,ten kinds of soups were tested quantitatively of the eight essential transitional metals(Cr,Mn,Fe,Co,Ni,Cu,Zn,and Mo) by means of atomic absorption spectrometry(AAS).
为了解广东人日饮的老火汤营养状况,作者等采用原子吸收光谱法测定了10种老火汤中Cr、Mn、Fe、Co、Ni、Cu、Zn、Mo等8种人体必需微量过渡元素的含量。
