-烧五花肉或直排,不放盐。
墨鱼切成麻将大的块。
上好的五花肉,切块,锅里放油,先炒肉(排骨),再加入墨鱼,炒干水分,加好料酒,加少许海天老抽上色,加海天生抽,炒几下,加水要淹没鱼肉,用小火烧(保持水似开非开状态)1-2小时,您觉得烂了就行,大火收干水,不要太干,加胡椒,少许味精,放一点点糖,加一点香葱段。结束。
备注:市场上有一种干墨鱼很咸(质量不好),那只能多泡一下,然后做菜时不能放老抽、生抽。
