肉馅蝉,以新鲜活蝉和精瘦猪肉为主要原料加工烹制。每盘菜需活蝉50克、鲜猪肉约150克。
蝉是高蛋白天然昆虫,蛋白质含量高达72%。活蝉捉来以后,摘去蝉羽、蝉腿,仅用蝉体作为原料。制作时,先将鲜猪肉剁成细泥,拌上适量食盐、味精作馅。逐只挑开蝉腹,将拌好的肉馅填入蝉腹,投入油锅用微火慢慢煎炸至熟,捞出装盘时摆成各种花样,再用新鲜芜荽装饰成蝉伏绿枝形状,上桌供食用。
