| 肉用牛 beef cattle 由普通牛和瘤牛或野牛杂交育成的牛品种。简称肉牛。体躯宽广，呈圆筒形，侧望和上望均呈长方形，后望呈方形。生长快，早熟，胴体净肉率高，切面呈大理石状花纹，肉质柔嫩多汁。 世界肉用牛主要品种有40余个，著名的有18世纪中叶英国首先育成的中小型肉牛品种，如海福特牛、安格斯牛和短角牛等。19世纪初，经50～100年欧洲各国育成夏洛来牛、利穆赞牛等肉牛品种。 犊牛经6～7个月哺乳期后采食青粗饲料。肥育方式有：①一贯肥育法，犊牛断奶后以丰富的饲料促其生长，一直达到出栏体重(一般18月龄)。此法消耗精料多，但提高出栏率，节约人工和设备。②集中肥育法，犊牛断奶后放牧或用大量粗料使其生长骨架，宰前3个月左右加强饲养，使其日增重1千克左右。此法消耗精饲料少，但时间长。肉用牛终年发情，性成熟一般在8～12月龄，配种适期14～18月龄。妊娠期283天左右。有纯种繁育和杂交繁育。中国多用纯种肉用公牛与当地黄牛杂交，初生犊体重大，生长较快。 |
