鸡翅膀400克,红葡萄酒50克,酱油45克,绍酒25克,京葱段100克,味精4克,精盐3克,白糖6克,姜2片,生油500克(实耗50克),水淀粉少许。
【制法】
(一)将鸡翅膀洗净,抹少许酱油。
(二)烧热锅,放生油烧至七八成热时,将鸡翅膀放入,炸至金黄色捞起,再用开水洗净。锅留余油,下京葱段、姜片煸炒片刻,加酱油、鲜汤、绍酒、白糖、精盐、放入鸡翅膀,汤开后移小火慢烧,待汤汁稠浓,鸡翅膀酥烂时,加味精、葡萄酒稍烧一会,再下水淀粉勾芡即好。

“贵妃鸡”是北京同和居饭庄的传统名菜。
关于此菜的来历,有着这样一个传说:一日,唐明皇与杨贵妃在百花亭饮酒取乐。杨贵妃烂醉如泥,突然撒娇道:我要飞上天!玄宗以为自己的宠姬要吃什么“飞上天”,于是便命太监传令厨师立即做一道“飞上天”菜献上来。这个菜名,弄得御膳厨师们团团转,不知该怎么个制法。正在大家为难之际,有一位厨师急中生智,一拍大腿说:“有了,快去买几只童子鸡来,斩下翅膀,焖煮熟烂,这不就是‘飞上天’吗?”众人听着有理,便帮他一起干起来,待菜成献上,果然色、香、味、形具佳。此刻杨贵妃酒醉已醒,当她吃着摆在面前的“飞上天”时,连声称赞:好吃,真好吃!因这菜色美肉嫩味香,贵妃又极爱吃,于是就有了“贵妃鸡”的美名。
