神仙钵和一般的火锅(打边炉)相似,以白醋2斤、红糖6两、沙姜3两倒入瓦钵,放在炭炉上熬成汤,然后选用牛三星(牛黄、牛肝、牛双弦)、鱿鱼、蜇皮等为肉菜上料,或选用鸡鸭的翅膀、猪粉肠亦可。当炖钵的汤水烧滚,可将席前的肉菜一件件夹起放在炖钵里烫,边烫边吃。由于菜料不断吸进汤里的味道,形成酸甜爽脆的风味,吃起来舒服得有如神仙的感觉,故名神仙钵。这种吃法为梧州独有。
