荞面为云南特产,荞面制作品种很多,荞糕是人们喜爱的一个大众化品种。其色泽棕红美观,有香甜气,吃后润喉,微带点苦味,清凉解热,富于营养,有助消化。荞香味浓醇。

主料:养面1.4千克。

配料:面粉、豆沙备1千克,芝麻100克。

调料:明矾、土碱各60克,白糖粉1.8千克,猪油50克。

制法:

(1)将土碱放锅中加水煮化。明矾加热水溶化。荞面、面粉放入盆,加水搅拌均匀,加明矾水搅拌匀。再加土碱水、白糖粉、猪油继续搅拌成糊状。

(2)蒸宠底上铺白纱布,将荞面糊倒2/3入笼,上火蒸20分钟,抬下后将豆沙铺在上面,再将余下的荞面糊倒上,上火蒸30分钟,并在表层用竹筷插些气孔加速其成熟。熟后将芝麻撒在表面上,晾凉后切成棱形块即成。
