原料配方 干线粉150克 油豆腐72只 净猪瘦肉100克 海蜒40克 熟猪油50克 细盐、葱末、姜末、黄酒适量、味精少许
制作方法 1.先将海蜒放在清洁的小布袋内，扎紧袋口，放入锅内，加水(3千克)及细盐煮沸，即得鲜汤。
2.取锅，放入油豆腐，加热水浸泡，用手捏一捏，使之柔软，然后捞出备用。
3.将猪肉剁成肉末，放入大碗内，加细盐、葱末、姜末、黄油及水(适量)，顺一个方向搅匀，至肉末起韧劲，使成肉馅。
4.将肉馅均匀地嵌入油豆腐内，然后放入鲜汤锅内烧熟。
5.将干线粉放入锅内，用沸水浸发，并加盖稍焖，再置火上煮沸，随即捞起浸在冷水中。
6.取清洁消毒碗，加味精，再从鲜汤锅内取出油豆腐6只，放入碗内。
7.在锅中放水烧沸，把湿线粉盛在漏勺内，放在沸水锅中烫一烫，然后倒入装有油豆腐的碗内，再舀上海蜒汤，上面加猪油，即成线粉油豆腐汤。
