[原料]
牛里脊肉500克,蒜苗50克,葱、姜、花生油、红辣椒、精盐、酱油、胡椒粉、湿淀粉、味精、香油、豆瓣酱各适量。
[制法]
1.将牛里脊肉切成3厘米长、15厘米宽的长方形薄片,放入碗内,加湿淀粉拌匀待用;葱、姜、红辣椒切成小象眼片;蒜苗切成3厘米长的段;精盐、酱油、味精、湿淀粉、胡椒粉加适量水,对成芡汁待用。
2.锅内放油烧至七成热,把挂好糊的肉片炸成浅红
色捞出,控净余油。
3.锅内留少量油烧热,放入豆瓣酱炒香,再放入葱、姜、红辣椒、牛肉片翻炒几下,随即将芡汁倒入,再放蒜苗,炒匀后淋上香油,出锅即可。
[特点]色泽酱红,味浓鲜香,甜辣适口。
