上党腊驴肉原专指沙锅腊驴肉,因制作创始于腊月而得名。它以新鲜驴肉为主要原料,配以各种香料、佐料、做工极为考究。其色泽鲜艳,醇香可口,以其独特的风味倾倒“美食家”,享誉古今。驴肉肌间结缔组织不甚发达,故俗语有“天上龙肉,地下驴肉”之说。上党腊驴肉具有较高的营养价值,是理想的高蛋白、低脂肪食品。同时又可健胃、活血,是脾虚肾亏和贫血症患者的滋补食品。上党腊驴肉在清嘉庆年间已闻名四方,并成为皇室贡品。在80年代全国熟肉制品评审上,腊驴肉受到与会者的好评。
