原料:胡萝卜500克,糯米粉400克,粘米粉100克,吉士粉、白糖、猪油、可可粉等适量。
调料:莲蓉馅。
制作方法:蒸。将胡萝卜洗净蒸,挤掉水沓成茸泥,加入糯米粉、粘米粉、吉士粉、白糖、猪油和匀揉成果蔬面团;揪一小砣加入可可粉,揉成咖啡色面团待用。然后将胡萝卜面团下剂,包入莲蓉馅心,捏成柿子形,用专用木梳压出4条纹路。将咖啡色的面团捏成柿饼蒂蘸水按上,入笼蒸熟即成。
风味特色:形似柿子,色泽桔黄,软糯甜香。
技术要领:用料比例要适当,可可粉不要用多。
