   半子囊菌纲的一科。单细胞或菌丝稀少。无性繁殖以出芽方式为主,个别属为裂殖。出芽方式又有多边芽殖和二端芽殖之分;有性生殖是经过接合或不接合形成子囊。子囊孢子圆形、椭圆形、礼帽形、土星形、钢盔形、运动帽形等 。本科成员常存于糖分较高的基物上,如水果表皮、酒曲、蜂蜜、昆虫体、制糖厂酿酒厂的器械以及下水道中,分布广泛。依据孢子的形状和同化硝酸盐的能力,本科下分39属372种。本科中用途较大而又比较常见的是酵母属的成员。可用于食品发酵、酿酒和维生素、氨基酸、核酸以及蛋白质的制取 ;同时,由于酵母生长快、含酶种类多,常是研究生物的生理、遗传诸方面的重要材料。
