性质:半知菌亚门、芽孢纲、隐球酵母科真菌中的一属。细胞球形、卵形或香肠形,有的形成荚膜。一般不形成假菌丝和真菌丝。多边芽殖。不产子囊孢子或掷孢子。菌落红色、粉红色橙色或黄色,圆形,边缘整齐,质黏。严格好氧呼吸。能同化某些糖类,无乙醇发酵能力。不能以肌醇为惟一碳源;多数同化硝酸盐;一般不液化明胶。菌体含大量脂肪,可提取应用。有的种对正癸烷、正十六烷及石油有弱氧化作用,并能合成β-胡萝卜素。个别是人或动物病原菌。分布较广,植物体、饮料、泡菜汁、海水、淡水和空气中常有。如黏红酵母(R. glutinis)和深红酵母(R. rubra)等。
