历史：竹荪又名竹参，属真菌类，是贵州山区的著名特产，因为生长在茂密而潮湿的竹林中，故名。它质地细腻，味道鲜美，特别适合于制汤菜。70年代初，美国基辛格博士来我国访问，曾品尝了用贵州竹荪烹制的“芙蓉竹荪”，因其清鲜异常，受到好评。镶竹荪是黔式宴席上的一道珍贵工艺菜。
特点：用竹荪和鸡脯肉蒸制而成。成菜色泽银白，竹荪脆嫩，汤汁乳白，口味清鲜。
工艺：将干竹荪放入清水浸软，用刀划破一面。将鸡脯肉茸、鱼肉茸和肥猪肉茸，加蛋清、精盐、葱、姜末、味精、干淀粉，拌和成馅，塞入划破的竹荪内，中间插入一枚火腿丝，再以竹荪裹住肉馅，上笼蒸熟取出。晾凉后，用刀切成斜条，用蒸碗码好，再上笼蒸热，出笼时，浇银白卤汁即成。
