白酒

    中国特有的一种蒸馏酒。由淀粉或糖质原料制成酒醅或发酵醪经蒸馏而得。又称烧酒、老白干、烧刀子等。酒质无色(或微黄)透明,气味芳香纯正,入口绵甜爽净,酒精含量较高,经贮存老熟后,具有以酯类为主体的复合香味。中国白酒产品种类繁多。 按酒的香型可将白酒划分为5种香型,又称5种风格。①酱香型 :以贵州茅台酒为代表。又称茅型。口感风味具有酱香、细腻、醇厚、回味长久等特点。②清香型:以山西汾酒为代表。又称汾型。具有清香、醇甜、柔和等特点,是中国北方的传统产品。③浓香型:以四川泸州老窖大曲酒为代表。又称泸型。口感风味具有芳香、绵甜、香味谐调等特点。④米香型:以广西桂林三花酒为代表。口感风味具有蜜香、清雅、绵柔等特点。⑤其他香型:具有各自独特的生产工艺和口感风味,其主体香及香型尚未确定。如贵州董酒、陕西西凤酒等,其口感风味依酒的特性,风格突出者为佳品。中国名酒繁多,主要有:贵州茅台酒、山西汾酒、四川五粮液、江苏洋河大曲、四川剑南春、安徽古井贡酒、贵州董酒、陕西西凤酒、四川泸州老窖特曲、四川全兴大曲、江苏双沟大曲、湖北特制黄鹤楼酒和四川郎酒等13种名酒。另外,优质白酒必须有适当的贮存期。白酒的贮存期,泸型酒至少贮存3~6个月,多在一年以上;汾型酒贮存期为一年左右,茅型酒要求贮存三年以上。
