性质:类黄酮属。一种芳香挨含氧杂环化合物。黄酮的异构体。精制的异黄酮呈片状或针状结晶。一般无色,但随着羟基的增加,可呈黄至深黄色。为广泛分布于高等植物的色素。一直被认为具有维生素P的活性,并不断被发现有更多生理活性,对机体代谢起调节的功能性质。大豆含有多种异黄酮。作为综合利用,可从大豆皮渣中萃取,以石油醚提纯结晶。其中染料木因有降低胆固醇,促进钙质吸收,调节机体免疫功能的保健作用,使大豆食品更具有特殊的食用价值。
