新鲜大河虾1000克,鸡蛋清1只,精盐、味精、鸭油、鸡汤各适量。
≮美食做法≯
1、用1000克新鲜大河虾,去头壳,留尾壳,洗净,沥水,用淀粉、蛋清和少许食盐将虾肉上浆;
2、炒锅上火,放入鸭油烧至6成热,投入凤尾虾划散,至尾壳见红、虾肉变白时即起锅,倒漏勺沥油。最后用鸡汤、味精、湿淀粉勾芡,连同划过油的虾肉、配料(青豆、葱白)用鸭油爆一爆即起锅上盘。

虾肉洁白,虾尾鲜红,形似凤尾,味鲜可口。
