The antibacterial activity of greengage juice was studied in this paper.

The results showed that the optimum conditions were as follows: The pH value of greengage juice was adjusted 5 with mixture of K2C4H4O6 and KHCO3 before fermentation;the optical sugar degree was adjusted to 20% or so;10% grape wine yeast was added in the greengage juice followed by fermenting at 24℃ and the quality of Greengage wine was good.
