   一种单糖,分子式CH2OH(CHOH)3CHO。又称果胶糖。广泛存在于植物中,通常与其他单糖结合,以杂多糖的形式存在于胶、半纤维素、果胶酸、细菌多糖及某些糖苷中。在许多松柏科(如红杉)树的心材中含有游离状态的L-阿拉伯糖。
   阿拉伯糖有8种立体异构体,常见的为β-L-阿拉伯糖和β- D- 阿拉伯糖。天然的L-阿拉伯糖很可能是由 D-木糖被尿苷二磷酸衍生物经酶促异构化反应的结果。自然界D-阿拉伯糖很少见,仅在某些细菌多糖中存在。 D-阿拉伯糖可由 D-葡萄糖降解而得。β-L-阿拉伯糖为白色晶体;熔点159~160℃,相对密度1.625,比旋光度!!!A0153_1+190.5°→+104.5°(C=3),溶于水。β- D-阿拉伯糖为白色晶体;熔点155.5~156.5℃,相对密度1.625,比旋光度!!!A0153_2-175°→-108°(甲醇水溶液),溶于水。
