Fifteen existing staple rice varieties/hybrids were studied on their brewing economic value, brewing quality characters, brewing technological parameters and the relationship among those factors by way of the variety comparison and the small-scale fermenting experiments for beer brewing .
本研究主要通过当前生产上大面积推广的15个主栽水稻品种(组合)的品比试验和小型啤酒发酵实验,对不同水稻品种(组合)的酿造经济技术指标,酿造品质性状,酿造工艺技术指标及它们之间的相关性进行了研究,结果表明: 1 参试品种(组合)在酿造经济技术指标和酿造品质性质上存在显著的差异。
