原料：
瘦牛肉、牛肝各200克，鱼丸、毛肚、豆腐干、菠菜各150克，人参5克，黄芪10克，当归、枸杞子各15克，大枣20克，甘草5克，午餐肉、水发粉丝、水发海带、葱、土豆、平菇各100克，鲜汤2000克。调料选用：豆瓣酱100克，菜油150克，醪糟汁100克，姜35克，大蒜20克，泡辣椒25克，盐15克，味精5克，花椒10克，牛油50克，熟鸡油、白糖、酱油、醋、葱滑各适量。
制作方法：
1、牛肉去筋络，切成大而薄的片；牛肝去皮膜，切成同牛肉相当的片；毛肚洗净，片开，切块；午餐肉切成长4厘米、宽2厘米、厚0.3厘米的条片；豆腐干洗净，切成条；水发粉丝切段；水发海带切条；蒜拍破，切节；菠菜择好洗净；平菇撕成条；土豆去皮，切片。将以上各料分别装盘，上桌摆好。
2、将人参、黄芪、当归、枸杞子、大枣、甘草放入沙锅或药罐中，加水烧开，熬半小时，澄出药液500毫升。
3、将熟鸡油、白糖、酱油、醋、葱花拌成调味碟，每人一碟，放上桌，以供蘸食用。
4、炒锅置火上，下菜油，烧至四成热，放豆瓣酱、泡辣椒节炒香，下大蒜、姜末、花椒炒几下，在下醪糟汁、盐、味精煮开，加鲜汤、牛油煮开，加入三分之二药液，打去浮沫，舀入火锅中，上桌点火，汤开后，加原料入火锅汤熟，蘸调味汁食用。吃的过程中，可随时加原汤及药液调味。
