〔主料辅料〕
山楂……100 克
湿淀粉……75 克
鲜奶……500 克
开水……1000 克
白糖……450 克
〔烹制方法〕
1.将山楂用瓦钵加少量开水，放入笼内，蒸至溶化。
2.将开水放入锅内，加白糖，煮至白糖溶解，加鲜奶，煮至微沸，加湿淀粉推拌至匀，成为白色的奶露，取出2/3 置汤盆内，取蒸溶的山楂加入奶露中，推拌至匀，成为红色的山植奶露。将山楂奶露从旁注入白色的奶露的另一侧，把白色的奶露挤在盆边，各占汤盆面积一半，并成太极图形。
〔工艺关键〕
太极图形，阴阳面积各占1/2，阴中有阳，阳中有阴，喻意至深，制作时要小心留意。
〔风味特点〕
“太极”是中国古代哲学术语，意为派生万物的本源。“太极山楂奶露”的“太极”亦取此义，故岭南地区此菜多用于婚宴喜事。山楂，又名山楂果。红果、山里红，原产我国，已有三千多年的栽培史，食用价值较高。据分析，每100 克果肉含钙质85 毫克，居各种干果之冠，含维生素c89 毫克，仅次于红枣，还含有蛋白质、脂肪、糖分等。有软化血管。降低胆固醇作用，可以预防心血管疾病。
