补充资料:锅仔鱼头炖豆腐
做法
1 鱼头去腮,刮鳞, 洗净, 切半;
2 锅内烧热油, 将鱼头两面煎一下;
3 倒入开水,移入沙锅内, 放姜片, 胡椒粉, 盐, 中小火炖至汤色乳白;
4 下豆腐, 加葱丝, 即成。
特点
基本不用过多调味, 尽量发挥利用鱼头本身的鲜味。
注意
最好有电炉, 边煮边吃, 还可以下粉丝, 豆苗等。
这里豆腐是嫩豆腐, 其实炖豆腐应该用中火的, 嫩豆腐容易炖散,
但是最后到是有豆花的效果, 豆腐不怕炖, 越炖越嫩, 越入味。
