【菜名】 金陵烤鸭

【特点】 鸭皮金红、香脆酥松,油润光亮,肉嫩鲜香,食之满口留香。堪为色、香、味三绝。四、山珍野味菜烹

【原料】

南郊麻鸭一只(重约2000克)。 青菜叶150克。花椒5克、葱30克、饴糖25克、麻油15克。

【制作过程】

将鸭宰杀治净,在右翅下开一小口取出内脏,洗净沥干。把青菜叶、花椒填入鸭腹内。葱叶塞入鸭子肛门,使肚膛饱满。将烤叉从鸭腿下裆插入,穿过胸骨,至肩骨颈皮穿口3.5厘米处戳通,将鸭头由左向右方向弯转,从眼睛下面戳通,卡住叉尖。水锅上火烧沸,将鸭头掀入水内,舀沸水浇烫鸭身,使鸭皮收缩绷紧,出现毛孔,然后用饴糖抹匀鸭身,放在通风处吹干。烤池放入木炭,点火烧燃后执鸭叉烤。先烤两侧,再烤腿、尾部、背部,最后烤胸部。待鸭皮吱吱作响,欲冒油花时,再以麻油涂之,并烤至金红色时离火退叉,片下鸭肉装盘,嵌上头尾,配以薄饼、甜酱、花鼓葱段同食.
