原料:

净仔兔1只(约750克) 鲜青尖椒50克 鲜红尖椒50克 姜片、葱段、精盐、味精、香油、辣椒油、冷鲜汤各适量 八角、桂皮少许

制法:

1.鲜青尖椒、鲜红尖椒去蒂洗净,均剁细成粒,纳碗,先加入适量精盐腌渍,再加入冷鲜汤、精盐、味精和香油、辣椒油调匀成鲜椒汁。

2.净锅掺水上火,放入净仔兔及姜片、葱节、八角、桂皮,煮至兔肉成熟时,捞出晾凉,再斩成条装盘,最后淋入鲜椒汁即成。

特点:

兔肉细嫩,咸鲜带辣,有一股鲜辣椒的清香味。

说明:

鲜青尖椒、鲜红尖椒剁细后,用精盐腌渍,或用热油略烫一下,可以减轻辣味。
