黄尖笋,出产于福建古田县黄田、水口沿江一带,尤以黄田炎多。黄尖竹多丛生,清明时节破土而出。采挖标准长25厘米,其中18~20厘米是埋在土里的部分,呈黄色,出土部分为青绿色。多腐殖质的松土地带出生的,笋质最好。黄尖笋不必预煮去汁,而像一般蔬菜一样要即时烹调处理。它可以热锅快炒而保其清脆,亦可清汤烧煮而留下甘味;它可以杂以腌菜、肉丝炒煮以富含多味,亦可单独下锅自求清正品味。
