原料：茄子、面粉、泡打粉、生粉、葱、姜、蒜、鸡精、白糖、醋。
制作方法：①茄子去皮，改刀切条。②面粉、泡打粉、生粉加水、少许色拉油，按比例调成脆浆糊，茄条裹糊。③锅里放油，烧至五成热，茄条下锅，炸酥，起锅，摆盘。④另置一口锅，少许油，将泡椒、姜、蒜炒香，加少量汤，调入盐、鸡精、白糖、醋，勾芡，放入葱花，烧开，浇在茄条上。
