This paper reviewed studies on kiwifruit ripening and softening and its regulation including fruit softening-related enzymes such as pectinesterase(PE), polygalacturonase (PG), xyloglucan endotransglycosylase ( XET ), β-galactosidase, cellulase, starchase, the regulation of ethylene,abscisic acid(ABA), indole-3-acetic acid(IAA) on fruit ripening and the effect of calcium on fruit ripening.
