豆沙碗豆黄
碗豆1000克,白糖600克,水1000克,琼脂10克,豆沙馅500克。
1.先将碗豆洗净加水,上屉蒸1个小时;下屉冷却后过凉,再放入锅中烧开,加入白糖和化开的琼脂,再烧开后煮半个小时,定在盘中2厘米厚。
2.将豆沙馅擀成5毫米厚待用。
3.把冷却定形的碗豆黄再次取出放在案子上,放上擀好的豆沙馅,豆沙馅上面再放上一层碗豆黄,切去边,再切成菱形块码盘即可。
