In accordance with the nature of Chinese-style food production, this paper proposes an en-hanced hygiene management in food purchasing, storage, processing, as well as the cleansing and sanita-tion of cooking equipments and utensils.

The competition in meal and drink profession is very intense, in such case, if our Chinese-style meal and drink wants to develop and strengthen well, and industrialize the production, there are many problems need to be resolved, what item to set up , standardization and quantification , quality control system and talented persons are the most important problems.
