番茄咖喱炒饭
原料：白饭300克，番茄50克，生香菇、胡萝卜、西兰花、熟豌豆仁、洋葱各10克，鸡蛋1个，葱1根，油3大匙，咖喱粉1小匙，盐1/2小匙，白胡椒粉1/3小匙。
做法：①番茄去蒂、洋葱去皮，洗净切丁；生香菇去蒂、洗净，对切成4块；胡萝卜洗净去皮，切片；西兰花撕去老筋、洗净；葱洗净切末；鸡蛋打入碗内，搅成蛋汁备用。②锅内放入1大匙油烧热，爆香葱末，倒入蛋汁炒熟，盛出备用。③锅内放油烧热，加入香菇、洋葱、西兰花、胡萝卜炒熟，加入咖喱粉、盐和白胡椒粉拌炒，再加入白饭炒匀，最后加入熟豌豆仁及番茄拌炒一下，最后与炒鸡蛋一起盛入盘中即可。
