加积鸭，俗称“番鸭”，是琼籍华侨早年从国外引进的良种鸭，其养鸭方法特别讲究：先是给小鸭仔喂食淡水小鱼虾或蚯蚓、蟑螂，约二个月后，小鸭羽毛初上时，再以小圈圈养，缩小其活动范围，并用米饭、米橡掺和捏成小团块填喂，20天后便长成肉鸭。其特点是，鸭肉肥厚，皮白滑脆，皮肉之间夹一薄层脂肪，特别甘美。再加以红咖喱与金瓜，更显活色生香。
