[原料/调料]
芭乐 1个(去籽约200公克)
生腰果 150公克
盐水 适量
糖 1大匙
水 1/4杯
酸梅粉 1/2大匙
[制作流程]
(1)将芭乐洗净沥干,切成8片,再用小汤匙将籽去除后,横切约1公分厚度,用盐水略泡后,捞起沥干水份备用。
(2)将生腰果用温油及中火炸至略黄后立即捞起,用餐巾纸将腰果吸附的油份吸干,冷后才会脆。
(3)将糖、水倒入锅中加热,搅拌使糖溶解,再倒入炸好的腰果,快速拌炒均匀,使腰果均匀裹上糖汁,即可盛起放入盘中。
(4)将锅烧热,放入少许油,依序放入芭乐、腰果、酸梅粉翻炒均匀入味,盛起放入盘中即可。
腰果也可以买现成的;此道菜很适合朋友聚餐时食用的点心。
