苜蓿茄汁薯枣
原料: 原 料：
苜蓿250克，土豆150克，醋1克，油炸花生米20粒，精盐3克，面粉10克，淀粉30克，番茄酱50克，酱油15克，白酒5克，植物油400克（实耗约50克），白糖，麻油各适量。
制法: （1）土豆蒸熟去皮，捣成糊，与面粉，淀粉，精盐，麻油一同拌匀搅透，分成20份，用1粒花生米作核，外包土豆泥，制成枣子形状，共做20颗。
（2）炒锅上旺火，放油烧至七成熟，放“薯枣”炸至金黄色，倒入漏勺。
（3）锅内留底油，放入苜蓿，白酒，精盐，略煸，起锅装在腰盘四周。
（4）取1个碗，放入淀粉，番茄酱，酱油，白糖，醋，精盐，加适量水调成芡汁，倒入锅中，用旺火烧至凝聚，再加入薯枣，淋上麻油，装盘即成。
特点: 色泽红亮，甜中带酸，苜蓿清香，色碧脆润，补脾益气，清热利湿。
