原汁酸辣蚬
主料： 新鲜蚬12两（约480克），芫荽1棵（切碎），葱粒1汤匙。
配料： 酸辣汁料：香醋2汤匙，沙糖1/2茶匙，黄酒、蒜茸各1茶匙，生抽、油各1/2汤匙，红辣椒1只（切碎）。
做法： 1、先将蚬浸于清水内4-5小时，使吐净砂泥，洗刷干净，沥干，然后除去无肉的一边壳。
2、将蚬连壳排于碟上，均匀撒上酸辣汁料，大火隔水蒸熟。
3、上桌前撒上芫荽碎、葱粒即成。
