[原料] 新鲜芦笋400克，干贝25克。
[调料] 黄酒2克，盐1克，味精1克，清汤1 50克，葱姜5克，生粉2克，清油7克(实耗)。
[操作程序]
1．干贝洗净，放黄酒中泡软，加入葱姜，上笼蒸酥，取出放纱布中揉成贝丝。
2．芦笋洗净切去老茎，并刨去下部的外皮。
3．锅中入油，待油温三四成热时，放入芦笋泡熟取出，装在盘中。
4．锅中加清汤，放入贝丝，加入黄酒、盐、味精，烧开后用水生粉勾芡，淋上清油，浇在芦笋上即成。
[特色点评] 鲜嫩爽脆。芦笋能清肺止渴，与干贝丝配伍，更受中外宾客的青睐。
[要领提示] 芦笋质地脆嫩，油温不宜高。
