原料
主配料:墨鱼(又名乌贼鱼)4只、葱5克、姜5克。
调料:绍酒20克、精盐10克、辣酱油10克、番茄沙司10克。
熏料:洋松木屑50克。
制法
(1)将墨鱼洗净漂清水中,另用锅一只,将葱、姜和墨鱼(包括墨鱼蛋)放入沸水锅中用旺火煮沸,烹入绍酒,用小火煨酥,加入精盐,稍煮即捞起沥干,冷却后将墨鱼肉卷成筒形,墨鱼蛋纳入其中。
(2)洋松木屑置旧铁锅中,锅内横隔一只铁网,熟墨鱼放其上,加盖用小火烧,木屑阴燃冒烟,片刻后离火,去盖,待稍冷后取出装盘,鱼头装在鱼卷上,吃时可蘸辣酱油或番茄沙司。
